Tasting note

Our inaugural Méthode Champenoise is a blend of 65% Pinot Noir and 35% Chardonnay grapes selected from the cool south-facing slopes high in the Adelaide Hills. Each bottle is hand-crafted, with tirage, riddling and disgorging being carried out on side in our Longwood winery. Ageing for a minimum of 12 months on lees adds hints of toasted nuts to the sweet strawberry and crisp green apple fruit aromas.
