After an 8 year drought, Kate has finally decided to put her hand back to making sparkling wine.
Kate obtained her winemaking degree from the Lycée Viticole d’Avize, in Champagne France in 1997. The next 4 vintages saw her working at her family winery Stone Bridge in another cool climate Manjimup, WA. Here she honed the skills and knowledge she gained in Champagne and produced premium, bottle fermented and aged sparkling. This expertise and both Hamish and Kate’s passion have merged to produce their inaugural 2008 Deviation Road Méthode Champenoise.
The Brut Méthode Champenoise containts Pinot Noir and Chardonnay which are both picked early.This ensures optimal natural acidity remains after the base wines undergo full malolactic ferment. Final blending and hand tirage is carried out early spring while the temperatures are still cool to ensure a slow secondary ferment in bottle (2 -3 weeks). Each bottle is then aged for a minimum of 12 months on lees prior to hand riddling and disgorging on site in our Longwood winery.
The fruit for this wine was all sourced from our family vineyard on Deviation Road in the Adelaide Hills which is at an altitude of around 600m. Small parcels are selected from various sites within the vineyard to give different structural and organoleptic characteristics in the final blend.
