Bouquet & Palate:
2008 was a great year for Sauvignon Blanc from our cool vineyard site. This wine shows generous pear and stone fruit aromas melding with hints of tropical fruit and asparagus. Crisp tangy acidity gives length of flavour and a dry finish.
Winemaking:
This begins with special care monitoring the fruit as it approaches ripeness. 2008 was no exception, picking 3 parcels over a 10 day period. This enables us to manage different ferment batches with slightly different characters and structure attributes. The final wine is then blended for release in July each year.

Fermentation: 100% stainless steel. Small batches.
Alcohol: 13.5 %
