2007 Shiraz

 

Bouquet & Palate:


Sweet dark berry fruits combine on the nose with hints of white pepper and earthy aromas. An elegant, medium bodied Shiraz with sweet ripe berry and plum characters which are balanced by fine soft tannins giving excellent length and structure.

Winemaking:

The dry mild conditions in 2007 were perfect for ripening Shiraz in the Adelaide Hills. Hand picked over several weeks this fruit was destemmed into open-top fermenters. Once fermenting each batch was plunged twice daily to extract colour and flavour. After 14 days the wine is then pressed into oak barrel for maturation.

14 months ageing in a mixture of new and old French oak has created a complex wine with excellent aging potential. Cellaring will reward those with patience. Best after 2012.
