2018 Grüner Veltliner
This wine has layers of aroma from lime zest and vibrant spice characters, to peach, oyster shell and preserved lemon. The full bodied flavours are balanced by a mouthwatering texture and fine lingering acidity.

Vinified using traditional methods, a small parcel of the fruit was soaked on skins overnight before the juice was pressed off and fermented in old French oak barrels. This contributes to the texture and length on the palate.
The other parcel was pressed off skins immediately for elegance, and fermented in stainless steel to preserve primary aroma and finesse. The blending of the two parcels gives a perfect balance of flavours and textures in the finished wine.
Our Longwood home block vineyard was planted in 2009. The Grüner vines are planted on the southern side of the hill, with tall gums providing shade from the western summer sun.
Being an early ripening variety, we have to net in January to protect the large enticing bunches from the birds.
The Adelaide Hills climate provides fantastic diurnal temperature variation allowing the grapes to build sugar levels during the day yet maintain a balance of acidity from the cool nights. These cool nights also help phenolic development in the berry, ideal for structure and balance.

15% wild-fermented in old French oak after 12 hours on skins, the remainder whole-bunch pressed and fermented in stainless steel. This has a very distinctive display of the varietal character of gruner veltliner, not so much the white pepper (it's there in a minor key) as the dappled texture and the fantastic grip it exerts within your mouth.
