2018 Sauvignon Blanc
A textural Sauvignon Blanc with fresh citrus and sweet pea aromas
preceeding flavours of nashi pear and preserved lemon.

At vintage all parcels are pressed into tank and cold fermented cool to preserve aromatics and freshness.
Small batches are kept separate to see how the vintage and vineyard sites express themselves.
The best parcels of wine are then blended and bottled for release in spring each year.
Picked in the earlier stages of the 2018 season when the conditions were cool, from our two vineyard sites situated in Mylor and Lobethal. The diverse characters each site gives add layers of complexity to the blend.
A small parcel was machine harvested to enable skin contact and incresae textural characters in the wine.
The rest was whole bunch pressed.
Brown butter salmon and fennel puree.
